Carrot and Beets Lettuce Boats
INGREDIENTS

  • 1 cup shredded carrots
  • 1 cup shredded beets
  • 1/2 cup chopped cilantro
  • Romaine lettuce for the boats
  • 2 Tbsp hemp hearts
  • Dressing
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 Tsp maple syrup
  • shake in salt, pepper, cayenne
DIRECTIONS
  1. Mix the carrots, beets, cilantro in a large bowl.
  2. Pour dressing over and toss to combine.
  3. Chill for about an hour (optional).
  4. Scoop mixture into the lettuce boats.
  5. Arrange on a plate and sprinkle with hemp hearts.
