Celery Soup

INGREDIENTS
  • 6 cups minced celery,leaves and all
  • 2 1/2 cups chicken stock
  • 2 cups water
  • 1 slice onion, diced small
  • 2 tablespoons. butter
  • 3 tablespoons flour
  • 2 cup milk
  • 1 cup cream
  • Salt and pepper to taste
  • White Wine to taste ( opt)
DIRECTIONS
  1. Combine celery, chicken stock and 2 cups boiling water in saucepan; simmer until celery is tender. Saute onion in butter; blend in flour. Stir in milk; cook, stirring, until thick. Add celery mixture and cream; season with salt and pepper. Process in Immersion blender until its smooth.add wine if you want, to taste. Serve warm

I recently have been battling a very bad sore throat and an friend told me to in her Homeopathic book it said to eat Celery and plain yogurt so after a couple of days eating celery I was done with that so I made this recipe. was very good
