Cheddar Chutney Tea Sandwiches

INGREDIENTS
  • 1/2 cup of Major Grey's Chutney
  • 1/2 pound of sharp Cheddar Cheese( preferably white)Coarsley grated( about 2 cups)
  • 1/2 cup sour cream
  • 3 oz soft cream cheese
  • 12 very thin slices of homemade-type whole-wheat bread
  • 1/2 cup minced fresh coriander leaves( can use less)
  • 1/3 cup mayonnaise
DIRECTIONS
  1. Stir together the chutney, cheese, sour cream, cream cheese, salt and pepper to taste.
  2. Mix well.
  3. Make 6 sandwiches with the filling, pressing together gently.
  4. With a 1-1/2" round cutter cut 4 rounds out from each sandwich.
  5. Place the coriander on a small plate and spread the edges of the rounds with mayonnaise.
  6. Roll the edges in the chopped coriander.
  7. Wrap the sandwiches in plastic wrap and chill well.
  8. Made be made 2 hours in advance
