Cheesecake Custard

- 1 cup low-fat buttermilk
- 2 eggs
- 2 teaspoons vanilla
- 1/3 cup sugar
- 2 tablespoons flour
- 2 cups low-fat cottage cheese
DIRECTIONS
- Pre-heat oven to 450ºF. Prepare 4-6 custard cups Blend well in stand-up or with immersion
- blender. Pour into custard cups; sprinkle with cinnamon. Bake in the hot oven 10 min. in a pan
- of hot water. Lower heat to 325ºF. Bake just until centers puff, about 30-35 minutes.
