  • Crust:
  • 1 cup sited all purpose flour
  • 1/4 cup sugar
  • 1 teaspoon grated lemon peel
  • 1/2 cup butter
  • 1 slightly beaten egg yolk
  • 1/4 teaspoon vanilla

  • Filling:
  • 5 8 oz. packages cream cheese
  • 1/4 teaspoon vanilla
  • 3/4 teaspoon grated lemon peel
  • 1 3/4 cup sugar
  • 3 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 4 or 5 eggs (1 cup)
  • 2 egg yolks
DIRECTIONS
  1. Make crust:
  2. Combine first 3 ingredients cut in butter till crumbly
  3. add egg yolk and vanilla; mix well
  4. put 1/3 of dough in bottom of 9" spring form pan
  5. bake at 400 about 8 minutes
  6. butter sides of pan; attach to bottom
  7. Make filling:
  8. Let cream cheese stand at room temp to soften - 1 to 1 1/2 hours
  9. beat till creamy
  10. add vanilla and lemon peel
  11. mix sugar, flour, and salt, gradually blend into cheese
  12. add eggs and egg yolks one at a time, beating after each just to blend.
  13. Turn into crust lined pan.
  14. Bake at 450 for 12 minutes; reduce heat to 300; bake 55 minutes or till knife inserted off-center comes out clean.
  15. Remove from oven; cool 1/2 hour; loosen sides of cheesecake from pan.
  16. Cool 1/2 hour more. remove sides from pan.
  17. Cool 2 hours longer...
