Cheesy cauliflower sauce (dairy free and gluten free)
INGREDIENTS

  • !Cauliflower:
  • 3-4 pounds cauliflower broken into florets
  • water to cover
  • !Sauteed veggies:
  • 2-3 tablespoons coconut oil
  • 1 cup chopped onion
  • 6-8 large cloves garlic, minced
  • !Blender:
  • 1 cup bone broth
  • 1/2 cup coconut milk
  • 1/2 cup nutritional yeast
  • 2 teaspoons salt (or to taste)
DIRECTIONS
  1. !Cauliflower:
  2. In a large pot cover the cauliflower florets with water, bring to a boil then simmer until tender (7-10 minutes).
  3. Drain
  4. !Saute:
  5. In a skillet over medium heat melt the coconut oil.
  6. Add onions and saute until translucent.
  7. Reduce the heat to low and add then minced garlic.
  8. Gently stir onion/garlic mixture until the garlic is lightly cooked, making sure not to let the garlic brown.
  9. Remove from the heat.
  10. !Blender:
  11. Put all the ingredients in a high speed blender and blend on high until smooth and creamy.
  12. Freeze in one serving size portions.
RECIPE BACKSTORY
I was inspired by a recipe on Pinch of Yum to create this cheesy cauliflower sauce recipe which brings pizzazz to veggies and meats for someone on a very restrictive diet. I am on an autoimmune protocol elimination diet and this sauce brightens up my day as I look forward to a meal that is topped off with this yummy sauce. Anyone can enjoy this (use veggie broth instead of bone broth if you don't eat meat).
