Chef's Chocolate Sauce for Garnish

  • 10 oz sugar
  • 1/2 cup light corn syrup
  • 4 oz unsweetened cocoa powder
  • 1 pound dark chocolate, melted

This sauce is ideal as a garnish or for decorating plates. For a chocolate sauce to use as a main component of a dessert, see my Hot Fudge Sauce. This sauce is thick when cool and thinner when hot. You can add water to thin out the cool sauce if necessary.
