Chicken Burgers

- 750g minced chicken
- 1/4 cup finely chopped spring onions/shallots
- 1 teaspoon salt-reduced soy sauce
- 2 teaspoons German or American mustard
- 4 teaspoons chopped parsley
- 1/4 teaspoon white pepper
- 6 wholemeal hamburger rolls, split and lightly toasted
- Crisp lettuce leaves for serving
- Spring onion 'brushes' for garnish
DIRECTIONS
- Preheat the grill to high. Line a grill pan with foil.
- Combine he minced chicken, spring onions, soy sauce, mustard, parsley and pepper in a mixing bowl. Mix well. Divide into 6 equal portions and shape into patties.
- Place patties in grill pan, without rack. Grill 5cm from the heat until patties are cooked through, about 5 minutes per side. Drain on paper towels.
- Place the arm rolls on serving plates; place lettuce on bottom of rolls and top with burgers. Cover with tops of rolls; garnish with spring onion and serve.
- TIPS: Make patties ahead and freeze. Prepare as directed through Step 2. Wrap individually in plastic freezer wrap, then securely in foil. Freeze for up to 2 months.
