Chicken Egg Fried Rice
INGREDIENTS

  • 1 Red Onion
  • 300g Chicken
  • 175g Long grain Rice
  • Olive Oil
  • Soy Sauce
  • 4 Eggs
  • Peas
DIRECTIONS
  1. Boil the rice for 10 minutes and set aside to cool.
  2. Heat 1 tbsp Olive oil in wok. Chop onion finely and fry until browned on a medium heat
  3. Chop chicken into small cubes and add to the onions, fry until cooked through.
  4. Separately, Heat a tsp of olive oil in a hot frying pan. Beat the eggs and add salt and pepper. Add the eggs to the hot frying pan and leave still for 10 seconds. Using a fork, save the eggs.
  5. Fry rice + eggs + soy sauce + peas + lots of pepper at a high heat
