Chicken Mozzarella

INGREDIENTS
  • Chicken Mozzarella:
  • 2 lbs. boneless skinless chicken breasts
  • 2 eggs, beaten
  • 1/2 cup dry bread crumbs
  • 1/4 cup butter
  • 1- 8 oz. can tomato sauce
  • 1/2 tsp. basil
  • 1/2 cup shredded mozzarella cheese
  • 1/4 tsp. paprika
  • Mozzarella Sauce:
  • 1 Tblsp. butter
  • 1 Tblsp. flour
  • 1/8 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 1/2 cup chicken broth
  • 1/2 cup half & half
  • 1/2 cup shredded mozzarella cheese
DIRECTIONS
  1. Cut chicken into serving pieces.
  2. Dip chicken into egg, coat with bread crumbs.
  3. Heat butter in a 12 inch skillet until melted.
  4. Add chicken and cook over medium heat until
  5. brown on both sides.
  6. Stir in tomato sauce and basil; reduce heat.
  7. Cover and cook on low for 30 minutes.
  8. Meanwhile prepare Mozzarella Sauce:
  9. Heat butter in 1 quart saucepan until melted.
  10. Stir in flour, salt and cayenne.
  11. Cook over low heat stirring constantly until smooth and bubbly; remove from heat.
  12. Stir in chicken broth and half & half.
  13. Return to heat and bring to a boil, stirring
  14. constantly. Boil and stir for 1 minute.
  15. Remove from heat and stir in mozzarella
  16. until melted.
  17. Next, arrange the chicken pieces in ungreased
  18. 9 x 9 x 1-1/2 inch baking dish.
  19. Spoon mozzarella sauce over chicken pieces.
  20. Sprinkle with mozzarella & paprika.
  21. Set oven to broil or 550 degrees. Broil
  22. chicken with tops 6-7 inches from heat until
  23. cheese is melted and sauce is bubbly around
  24. edges.
  25. Very good served with pasta & sauce.
