Chicken Packets with Fruit:
INGREDIENTS
- 3 skinless boneless chicken breast halves -- sliced 1/2" thick
- 1 large pears -- peeled, cored and julienned
- 1 large granny smith apple -- peeled, cored and julienned
- 1/2 cup fat-free Italian salad dressing
- 1 teaspoon poultry seasoning
- salt and pepper -- to taste
DIRECTIONS
- Preheat oven to 375F. Place all prepared ingredients into a bowl, toss until completely
- coated. Allow to marinate while preparing foil wraps. For each serving cut an oversize
- piece of heavy duty foil. Place equal portions of chicken and fruit mixture on one side of
- each piece of foil, fold over and seal with a double fold. Place sealed foil packets on a
- large jelly roll pan, Place in preheated oven for 18 minutes. To serve Place packet on a
- plate, Cut an X across the top of the packet, fold back and serve.
