- 4 lg fresh chicken breasts (boneless/skinless)
- 2 eggs
- 3/4 c Parmesan Cheese
- 1 tsp salt
- 1 tsp Paprika
- 1/3 cup EVOO
- 1 pkg sliced Mozzarella (or about 2 1/2 cups of finely grated)
- 1 15 oz jar of your favorite spaghetti sauce.
- 2 cups cracker crumbs
- Hot cooked spaghetti
- Mix parmesan cheese, salt, paprika & cracker crumbs into a bowl. In a separate bowl, beat eggs, dip chicken into egg mixture and then into crumb mixture, brown in oil on stove top. Place in 9x13 inch pan, top with Mozzarella Cheese - Pour tomato sauce over all - cover with foil and bake for 1 1/2 hours at 350 degrees. Serve over hot spaghetti.
