Chicken and Dumplings
- 1 Whole Chicken
- 1 Bay Leaf
- Garlic to taste
- 1/4 teaspoon cumin
- Salt & Pepper to taste
- 1/4 teaspoon poultry seasoning
- chopped carrots
- Place all ingredients in a pot of water and simmer for about an hour or until chicken is tender. Remove chicken from pot and cool. Put broth in the frig to cool completely. Skim fat off the top. Remove chicken from the bones and set aside
- Add to stock your choice of veggies. You may need to add more of the above seasoning to the stock for added flavor, as well as some poultry bouillon. Sometimes add italian seasoning for an added twist. Simmer until veggies are done. Add chicken to the stock.
- For the dumplings, I use the recipe on the box of Bisquick. If your family loves dumplings, you might consider 1 1/2 - 2 times the recipe. Add some garlic and or italian seasoning to the dumplings if you'd like.
