Chocolate Cappuccino Cheesecake

- Crust: 1 ½ c. chopped pecans
- 1 ½ c. chocolate wafer cookies
- ¾ c. melted butter
- ½ c. melted chocolate chips
- Filling: 16 oz. cream cheese, softened
- 1 c. brown sugar, packed
- 4 eggs
- 2 tsp. vanilla extract
- 1 ½ c. melted chocolate chips, cooled
- 1/3 cup cold brewed coffee
- 1 c. sour cream
- Topping: 1/3 c. whipped cream
- ½ c. melted chocolate chips
DIRECTIONS
- Mix pecans, cookies, and butter and press into greased spring form pan.
- Drizzle wit chocolate and chill.
- Blend all filling ingredients until smooth.
- Pour filling into crust; bake at 300 degrees for 1 hour.
- Reduce heat to 275 and bake 2 hour, reduce heat to 250 and bake 30 minutes more.
- Cool completely.
- Blend chocolate and whipped cream until smooth and creamy and drizzle over cake.
