Chocolate Chip Muffins

INGREDIENTS
  • 1/2 cup sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup miniature semisweet chocolate chips
DIRECTIONS
  1. In a large mixing bowl, cream sugar and shortening until fluffy.
  2. Add egg, milk and vanilla; mix well.
  3. Combine the dry ingredients and gradually add to the creamed mixture and mix well.
  4. Fold in chocolate chips.
  5. Spoon about 1 tablespoon of batter into each greased or paper-lined mini-muffin cup.
  6. Bake at 375 for 10-13 minutes or until muffins test done.
  7. Cool in pan 10 minutes before removing to a wire rack.
