Chocolate Peppermint Cookies

  • 1 cup butter
  • 1 1/2 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2/3 cup cocoa
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups soft peppermint chips or Andees mints, chopped
DIRECTIONS
  1. Preheat oven to 350 degrees
  2. Cream butter, sugar, egg and vanilla and beat well. Combine flour, cocoa, baking soda, salt and add to creamed mixture, blend in. Stir in peppermint.Bake at 350, for 8-10 minutes (watch for burning), cool on racks
