Chopped Apple Cake
  • 3/4 cup oil
  • 2 cups sugar
  • 2 eggs, well beaten
  • 3 cups chopped apples (not too fine)
  • 1 cup nut meats
  • 3 cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  1. Grease and flour a 13" x 9" cake pan. Preheat oven to 300°F.
  2. In a large bowl, mix all ingredients by hand until well blended. Pour into prepared pan. Bake 30 to 40 minutes at 300°F.
This is my mom's recipe. She used to make it in the fall when I was a child. I'm not sure where she got the recipe, but it is very rich and reminds me of caramel apples!
