Chunky Italian Soup

INGREDIENTS
  • 1 lb ground beef
  • 1 med onion, chopped
  • 1 can tomato soup (undiluted)
  • 2 cans chopped tomatoes with Italian seasoning
  • 4 cups water
  • 2 cloves minced garlic
  • 2 tsp oregano
  • 2 tsp basil
  • 2 T chili powder (optional but I always use)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 carrot, chopped
  • 1 zucchini, chopped
  • 1 can Italian style green beans (drained)
  • 1 can light red kidney beans (drained)
  • 8 oz cooked pasta (shells, macaroni, something small)
DIRECTIONS
  1. Brown ground beef and onion, drain. Add soup, canned tomatoes, water, garlic, oregano, basil, chili powder, salt, and pepper. Simmer 30 minutes. Add carrot, zucchini, and beans. Simmer 20 minutes. Add cooked pasta and serve. Garnish with Parmesan cheese if desired.
RECIPE BACKSTORY
Definitely a meal in a bowl. If you want to make ahead and freeze, don't add the pasta until ready to serve.
