Cincinnati Chili Secret
INGREDIENTS

- * 1 quart beef broth (I actually think chicken broth adds a better depth of flavor but I didnt do it that way this time)
- * 2 lbs ground beef
- * 27 oz can whole tomato lightly drained (cut lightly)
- * 1 can tomato sauce
- * 1/4 teaspoon ground allspice
- * 4 garlic cloves, minced
- * 2 tbsp Worcestershire sauce
- * 2 tbsp unsweetened cocoa, or chocolate powder (I used sweetened ground chocolate in this batch...LOVED IT)
- * up to 1/4 cup chili powder (some like it with more, i did less)
- * 1 tsp cayenne (throw in some red pepper for a kick if yould like-I didnt do it this time)
- * 1/4 tsp white pepper (if you dont have it dont put in black pepper as a substitute-it isnt the same...though black pepper wouldnt be all bad id go light with it on any case)
- * 1 tsp ground cumin
- * 1/4 tsp curry powder
- * 2 tbsp cider vinegar
- * 1 whole bay leaf ( I used an extra half, so 1 1/2)
- * 1/4 tsp ground cloves
- * 1 tsp cinnamon
- * 2 tbls dark molasses
- * 1 1/2 tsp salt (I actually had to add about another tsp to mine)
- "Toppings"
- * cooked spaghetti to serve chili over, optional (if you are able to make home made noodles-its to die for)
- * 2 yellow onions, diced
- * Cheese
- * oyster crackers
- * Dark kidney beans
DIRECTIONS
- Preparation:
- 1. Bring broth to a boil then Add beef to broth to a 4-quart pot. simmer while stirring until the ground beef is in very small pieces. Simmer for 30 minutes to a couple hours and add all the rest of the ingredients. ( I let it simmer down in the beef broth for about an hour and a half then added another four cups of beef broth and let it simmer down slightly before adding all the rest of the ingredients
- 2. Simmer on low, uncovered, for 1 hours. Add broth as needed if the chili becomes to thick. Use a mixer to blend the mix for a minute...mostly to get the tomatoes down and everything uniform.
- 3. Refrigerated the chili overnight, and the next day remove the layer of fat from top before reheating and serving. This time i actually didnt have fat, partially because I let it simmer down initially...I still made it the day before though.
