Cinnamon Rolls

INGREDIENTS
  • Dough:
  • 2 packages instant yeast
  • 1/2 c. hot water
  • 1 Tbsp. sugar
  • 1/2 c. butter
  • 3/4 c. warmed milk
  • 1/2 c. granulated sugar
  • 1 egg
  • 1 tsp. salt
  • 4 1/2 c. flour
  • Filling:
  • 1/3 c. butter
  • 1 c. brown sugar
  • 1/4 c. granulated sugar
  • 3 Tbsp. ground cinnamon
  • Icing:
  • 1/2 c. margarine
  • 1/2 c. cream cheese
  • 1 c. powdered sugar
  • 1/2 tsp. lemon juice
  • 1/2 tsp. vanilla extract
DIRECTIONS
  1. Melt the butter and combine it with the warm milk. Meanwhile, dissolve yeast in hot water. Add 1 tablespoon sugar, let sit and rise. Mix both mixtures on low with a dough hook blade. Slowly add the sugar, then the egg. Add the salt and 2 cups of flour, a little at a time mixing on low speed. Continue to add the remaining flour, 1/2 cup at a time. Mix until dough pulls away from the sides of the bowl. Knead the dough, place it in a greased bowl, and cover with a damp cloth. Let rise for 1 hour. Roll dough into a 12"X24" rectangle. Top with cinnamon filling and roll lengthwise. Cut into 1 1/2" slices. Let rise again in baking pan. Bake at 350 degrees for 15 minutes. Frost with icing when cooled.
