Cipolline Agrodolce

INGREDIENTS
  • 3 lbs. small white onions
  • 1/4 cup butter
  • 2-1/2 Tbls vinegar
  • 2 tsp. sugar
  • 1/4 tsp salt
  • Fresh ground pepper
DIRECTIONS
  1. Peel onions and put in a large skillet or cast iron pan in a single layer. Add the butter and enough water to come an inch up the side of the pan. Cook over medium heat, turning frequently, adding more water as needed. After 20 minutes add vinegar, sugar, salt and pepper. Cook slowly for 2 hours or more till brown and glazed.
