Cleaning Out the Fridge Chicken Tortellini Soup
INGREDIENTS
  • Splash of olive oil
  • 1 cup carrots, sliced into bite size pieces
  • 1/2 cup celery, sliced into bite size pieces
  • 5 cans chicken broth (~70 ounces)
  • 2 cups cooked shredded chicken
  • 3 cloves garlic, minced
  • 1 tsp Penzey's pasta sprinkle
  • 1/2 tsp parsley
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • Dash of red pepper flakes
  • 2 cups frozen tortellini
  • 1 cup broccoli, cut into bite sized pieces
  • 1/4 cup spinach, roughly chopped
DIRECTIONS
  1. Add a splash of olive oil to a large pot. Toss in the carrots, celery and garlic. Saute the vegetables for about 3 minutes. Add the cooked chicken, chicken broth and seasonings into the pot and bring to a boil.
  2. Once the broth is boiling add in the tortellini, broccoli and spinach. Continue boiling until tortellini is done. Enjoy.
