Coconut Cake with choco chips and crispy coconut-meringue top
INGREDIENTS

  • Dough
  • 100g Softened butter
  • 250g sugar
  • 2 eggs y 1 egg yolk
  • 300g Flour
  • 1 Tbsp Baking Powder
  • 1 Tsp Baking soda
  • 1 Tbsp vanilla extract
  • 250 cc Milk
  • 100g chocolate chips
  • 40g shredded coconut
  • Crispy coconut-meringue top
  • 40g shredded coconut
  • 1 Egg White (big)
  • 80g Sugar (twice the weight of the egg white)
DIRECTIONS
  1. Mix butter and sugar untill it's creamy
  2. Add the eggs one by one and the egg yolk
  3. Add the vanilla extract
  4. Add the coconut
  5. Keep mixing untill it's smooth.
  6. Alternate the flour (previously sifted with the baking powder and baking soda) with the milk.
  7. Add the chocolate chips.
  8. Put in 9 inch (24 cm) savarin cake pan greased with butter and dusted with flour.
  9. For the Crispy Meringue top
  10. Beat egg whites until foamy. Add the sugar and the coconut and keep beating. Put this mix on top of the batter and put it in the oven (minimum heat, but pre-heated for a 10-15 minutes) for arround one hour,
