Coconut-Cashew Crunchers
INGREDIENTS
  • 1 cup packed brown sugar
  • 1 cup sugar
  • 1 cup butter or margarine, softened
  • 1 tsp vanilla
  • 1 egg
  • 2 1/2 cups AP flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups flaked coconut
  • 1 1/2 cups chopped cashews
DIRECTIONS
  1. 1) Heat oven to 350.
  2. Beat sugars, butter, vanilla and egg in a large bowl with electric mixer until creamy.
  3. Stir in flour, baking soda and salt.
  4. Stir in coconut and cashews.
  5. 2) Drop dough by 1/4 cupfuls about 3 inches apart onto ungreased baking sheet; flatten slightly.
  6. 3) Bake 12 - 15 minutes or until edges are golden brown.
  7. Cool a few minutes on sheet and then transfer to wire rack to cool completely.
