Coconut Chews (bar cookies)

INGREDIENTS
  • Shortbread
  • 3/4 cup butter
  • 3/4 cup confectioners sugar
  • 1 1/2 cups flour
  • Coconut Mixture
  • (prepare this while shortbread is baking)
  • 2 eggs
  • 1 cup brown sugar
  • 2 tbsp flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 1/2 tsp chopped walnuts
  • 1/2 cup flaked coconut
  • Glaze
  • (Start to prepare glaze 3-5 minutes before shortbread with coconut mixture will finish baking)
  • 1 1/2 cups confectioners sugar
  • 2 tbs butter
  • 3 tbs orange juice
  • 1 tsp lemon juice
DIRECTIONS
  1. Shortbread
  2. Preheat oven to 350
  3. Beat butter and sugar together
  4. Stir in flour with a spoon
  5. Press dough into the bottom of a 13 x 9 pan
  6. Bake at 350 for 12-15 minutes
  7. Coconut Mixture
  8. Mix all ingredients together
  9. When shortbread is done cooking, remove from oven and pour coconut mixture on top of the shortbread, spreading evenly.
  10. Bake at 350 for 20 minutes
  11. Glaze
  12. Heat butter in a pan until butter melts.
  13. Stir in remaining ingredients.
  14. Smooth glaze onto cookies and let cool.
  15. Cut into 3 x 1 bars.
