Coconut Chocolate Chip Bread
  • Cooking Time: 20 minutes
  • Preparation Time: 2 1/2 hours
  • 2 teaspoons yeast
  • 3 cup bread flour
  • 2/3 cup coconut flakes
  • 1/4 teaspoon salt
  • 1 1/3 T. coconut extract
  • 1 1/3 T. vegetable oil
  • 1 cup water
  • 2/3 cup chocolate chips
  • 1/2 cup nuts (opt)
  1. Add 1st 7 ingredients to bread machine.
  2. Use dough cycle on manual if you are going to shape and bake in the oven. You may bake in the bread machine. Add chips and nuts when machine beeps for additional ingredients. (if you put the chocolate chips in before, they will beat into the dough and you will have few chips and a pretty brown bread. If baking in the oven, bake at 375 degrees for approximately 15-20 for buns. This dough will make 12-16 buns.
  3. This bread does not need sugar. The sugar comes from the coconut.
This bread is our son's and daughter's favorite. I did a bit of tweaking to make it work like we wanted. There is enough sugar in the coconut that you do not have to add sugar. Enjoy.
