Coconut Potato Pudding
INGREDIENTS
- 2 (16 oz.) cans sweet potatoes
- 1 stick butter
- 2 eggs, beaten
- 3/4 c. milk
- 1/2 tsp. cinnamon
- 1/2 c. brown sugar
- coconut
DIRECTIONS
- Beat all ingredients with an electric mixer. Bake in buttered round baking dish (1 1/2 quart) at 350 degrees for 30 minutes. Top with coconut and brown under broiler.
