Cod a'la French Country
- 4 cod fillets
- salt & pepper to taste
- 3tbsp olive oil
- 4 plum tomatoes
- 4 kalamata olives-sliced
- pinch of thyme
- 1 tsp dry basil
- Sprinkle fillets with salt & pepper
- Heat 11/2tbsp.olive oil in large skillet over medium heat-add cod & cook for 30 seconds on each side.
- Sprinkle tomatoes,olives,& thyme over cod-reduce heat & continue cooking for 2 minutes.
- Add basil & remaining oil.Cook,covered for 1-2 minutes until cod flakes easily with fork.
