Cod a'la French Country

INGREDIENTS
  • 4 cod fillets
  • salt & pepper to taste
  • 3tbsp olive oil
  • 4 plum tomatoes
  • 4 kalamata olives-sliced
  • pinch of thyme
  • 1 tsp dry basil
DIRECTIONS
  1. Sprinkle fillets with salt & pepper
  2. Heat 11/2tbsp.olive oil in large skillet over medium heat-add cod & cook for 30 seconds on each side.
  3. Sprinkle tomatoes,olives,& thyme over cod-reduce heat & continue cooking for 2 minutes.
  4. Add basil & remaining oil.Cook,covered for 1-2 minutes until cod flakes easily with fork.
