Coffee Blonde Brownies

INGREDIENTS
  • Cooking Time: 25 to 30
  • 2 1/4 c. packed brown sugar
  • 1 1/2 sticks butter
  • 2 TBL instant coffee
  • 1 TBl hot water
  • 2 eggs
  • 2 TBL vanilla extract
  • 2 C. flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 c. pecans, chopped
  • 1 c. semi-sweet chocolate chips
DIRECTIONS
  1. Heat sugar and butter till butter melts and it's fairly hot.
  2. Remove from heat.
  3. Dissolve coffee in hot water and add to sugar mixture. Cool.
  4. Beat in eggs and vanilla.
  5. Add mixed dry ingredients.
  6. Add nuts and chocolate chips.
  7. Bake at 350 in a 9x13 greased pan. 25-30 mins.

I wish I could remember where this recipe came from. I've had it for a long time! I'm a huge chocolate person, but these non-chocolate based brownies are undoubtedly now my all time favorite. And my friends ask for them all the time!
