Company Sweet Potatoes

  • 3 C sweet potatoes (cooked)
  • 2 eggs
  • 1 cup sugar
  • 1 cup canned milk
  • 1/3 cup butter
  • 1 tsp vanilla
  • Topping
  • 1 cup coconut
  • 1 cup Chopped pecans
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup butter
DIRECTIONS
  1. Boil sweet potatoes in skins until tender. Then peel and measure. Add all the above ingredients together in bowl and blend with mixer or blender. Pour into 9 x 13 glass dish.
  2. Make topping and sprinkle over top of sweet potato mixture. Bake at 375 for 25 minutes.
RECIPE BACKSTORY
This is a recipe I've been having for Thanksgiving ever since I was little. I think it came out of a Junior League cookbook or something. In any case, it puts those marshmallow-covered sweet potato casseroles to shame. :) It's more like a dessert but we eat it with our main meal at Thanksgiving.
