Coriander-Spiced Chicken or Lamb Kebobs

  • 1 1/2 T olive oil
  • 1/2 t red wine vinegar
  • 1 large garlic clove, minced
  • 1 t ground cumin
  • 1 t ground coriander
  • 1/4 t cayenne
  • 1/4 t salt
  • 1 1/2 lbs lamb or chicken
DIRECTIONS
  1. Whisk together all ingredients except the meat
  2. Add meat, toss to coat (lightly coated)
  3. Marinate 5-10 minutes
  4. Grill skewers. Lamb 8 minutes or until crust brown but pink inside (turn once). Chicken 10 minutes until no longer pink.
  5. Serve with Simple Lemon Yogurt Sauce
