Crawfish Stew
INGREDIENTS

  • 1 lb. crawfish tails & fat
  • 1/2 cup margarine
  • 1/2 cup flour
  • 1 yellow onion ,chopped
  • 1/2 bell pepper, chopped
  • 2 ribs celery, chopped
  • 1 clove garlic, chopped
  • 1/3 tbsp. Lee & Perrin
  • 1 tsp. minced parsley
  • 1 tsp. minced scallions
DIRECTIONS
  1. Make a roux with flour &
  2. margarine , cut off heat.
  3. Add crawfish fat & all vegetables.
  4. Stir mixture until it stops
  5. sizzling. Add seasoned crawfish
  6. & enough water to cover all
  7. ingredients. Let simmer for 30
  8. minutes. Add green onions &
  9. parsley the last 5 minutes. Serve
  10. over cooked rice. Note you may
  11. substitute shrimp, oysters, crab
  12. meat or fish.
