Crispy Black Bean Salad

  • 3/4 batch The Un-Salsa Salsa, high protein, fresh flavors (aka Asian Pear Salsa)
  • 1 can Black Beans
  • Tortilla Chips (no trans fat)
DIRECTIONS
  1. Here's a little serving suggestion for a quick "taco salad" using healthier ingredients.
  2. Crispy Black Bean Salad
    serves three
  3. Ingredients:
  4. 3/4 batch The Un-Salsa Salsa, high protein, fresh flavors (aka Asian Pear Salsa)
  5. 1 can Black Beans
  6. Tortilla Chips (no trans fat)
  7. Directions:
  8. Prepare salsa, set aside.
  9. Lightly crumple 1 serving tortilla chips (about 9 chips) into an individual-sized serving bowl. Repeat with 2 additional bowls.
  10. Add 1/2 cup directly from can of black beans to bowl (about 1/3 can per serving.) Repeat with the other 2 bowls.
  11. Add 1/4 of a full size recipe (or 1/3 of a 3/4 size batch) of Asian Pear Salsa to bowl. Repeat with the other 2 bowls.
  12. Gently mix to blend. Eat immediately if you like your chips crispy, or let slightly soften from the black bean and salsa liquids.
