Crockpot Chicken Adobo
INGREDIENTS
  • ½ cup cider vinegar
  • ½ cup soy sauce
  • 1 tsp ground ginger
  • 3 large cloves garlic
  • 2 bay leaves
  • 8 whole peppercorns
  • 3 lbs boneless skinless chicken thighs
DIRECTIONS
  1. Cut up the chicken into large bite sized chunks. Place chicken in bottom of a slow cooker.
  2. Mix up all other ingredients and pour over the chicken.
  3. Cook on low for 8 hours.
  4. Serve with rice.
  5. Variation: This also works wonderfully with a pork roast instead of chicken.
