Crockpot Chicken Adobo
INGREDIENTS
- ½ cup cider vinegar
- ½ cup soy sauce
- 1 tsp ground ginger
- 3 large cloves garlic
- 2 bay leaves
- 8 whole peppercorns
- 3 lbs boneless skinless chicken thighs
DIRECTIONS
- Cut up the chicken into large bite sized chunks. Place chicken in bottom of a slow cooker.
- Mix up all other ingredients and pour over the chicken.
- Cook on low for 8 hours.
- Serve with rice.
- Variation: This also works wonderfully with a pork roast instead of chicken.
