Cucumber Pasta Salad
INGREDIENTS
  • Servings: 8 to 10
  • 8 ounces tube pasta
  • 1 tbsp vegetable oil
  • 2 medium cucumbers, thinly sliced
  • 1 medium onion, thinly sliced
  • 1-1/2 cups sugar
  • 1 cup water
  • 3/4 cup vinegar
  • 1 tbsp prepared mustard
  • 1 tbsp dried parsley flakes
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic salt
DIRECTIONS
  1. Cook the pasta according to package directions; drain and rinse in cold water.
  2. Place in a large bowl; stir in oil, cucumbers and onion.
  3. Combine remaining ingredients; pour over salad and toss.
  4. Cover and chill for 3-4 hours, stirring occasionally.
  5. Serve with a slotted spoon.
