DATE CANDY

INGREDIENTS
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/4 cup liquid honey
  • 1/4 tsp. cinnamon
  • pinch of salt
  • 1 1/2 cups chopped dates
  • 1 cup chopped pecans
  • 2 tbsp. butter
  • 1 tsp. vanilla
  • 2 oz. semisweet chocolate, chopped
DIRECTIONS
  1. In a saucepan bring milk, sugar, honey, cinnamon and salt to a boil.
  2. Reduce heat and simmer for 15 to 18 minutes or until thickened and reduced by one third. Remove from heat.
  3. Stir in dates, pecans, butter and vanilla.
  4. Spoon into a foil lined 8” square cake pan pressing evenly.
  5. In a bowl over saucepan of hot (not boiling) water melt chocolate stirring occasionally; drizzle over date mixture.
  6. Refrigerate for at least 4 hours or until chilled. Remove from pan.
  7. Cut into squares.
