Damien's Chilaquiles
CATEGORIES

  • eggs
  • pork
  • diced green chilies
  • Adobo seasoning
  • Cumin
  • Chili powder
  • Epazote
  • chicken or pork stock (or water)
  • corn tortillas
  • red enchilada sauce
  • shredded colby jack
  • Sazon
  • Oil for frying
DIRECTIONS
  1. We simmer the meat over night.
  2. Put your pork roast (we had a loin) in a saucepan.
  3. Add green chilies, ome Adobo seasoning, cumin, Epazote.
  4. Add some stock or water.
  5. Put a cover on it, turn it to low and go bed! (or simmer until meat is falling apart)
  6. Cut up corn tortillas and deep fry them; set aside
  7. Whisk the eggs
  8. In a separate bowl, add about a cup of the enchilada sauce
  9. Add cumin and couple packets of Sazon
  10. Mix that up.
  11. Add as much as you like to the eggs.
  12. Remove the pork from the stock

  16. In a medium hot skillet, add eggs.

  18. And cook and scramble.

  20. Add shredded pork.

  24. Add more sauce (I'd probably add a lot of sauce here, but just add to your liking)

  26. Serve with warm soft corn tortillas (and refried beans... but I don't think my sister had any beans and I forgot to ask her to pick them up for me)
  27. Remove the pork from the stock and shred it
  28. In a medium hot skillet, add eggs; cook and scramble.
  29. Add shredded pork.
  30. Add chips and cheese.
  31. Add more sauce (I'd probably add a lot of sauce here, but just add to your liking)

RECIPE BACKSTORY
A few years ago my nephew, Damien asked me if I knew how to make Chili Killahs (that's how it sounds with his thick Boston accent... it would be Chili Killers to anyone not from the Boston area) I had no idea what the heck he was talking about. He spent some time in Baja California Mexico and had them there. I asked what was in them. He went on to say eggs, chicken, sauce, cheese and chips. It took me a while, but I finally figured out he meant Chilaquiles. It's a traditional Mexican comfort food. If I remember correctly, the addition of eggs is more common in Baja California part of Mexico. So in searching the internet and from his memory, we came up with this! They rock and he makes them for me every time I visit!
