Date Nut Pudding
INGREDIENTS
  • Cooking Time: 30-35
  • 1 c. white sugar
  • 1 1/2 c. all purpose flour
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1 c. dates, pitted
  • 1/2 c. chopped pecans
  • 1 tsp. vanilla extract
  • 1 1/2 tsp. baking powder
  • 2 c. brown sugar, packed
  • 2 c. water
  • 5 T. butter
DIRECTIONS
  1. Preheat oven to 375 degrees. Grease baking pan. Combine sugar, flour, milk, salt, dates, nuts, vanilla and baking powder and mix well. Pour batter into prepared pan. In a sauce pan, over medium heat, combine brown sugar, water and butter and bring to a boil. Pour brown sugar mixture over batter. Bake for 30 to 35 minutes or until toothpick comes out clean. Serve warm with whipped cream.
