Delicious, healthy, and very low calorie soup

  • 1- Lg. bag of frozen Broccoli; small bag of small carrots, cut in half; two medium onions, chopped to bite size pieces; 1 lg. can and 1 small can of reg. chicken broth, low fat will not give it the satisfying flavor and is only a few more calories. Don't sacrifice taste. 2T. olive oil; 2T. flour; 1t. butter or oleo. 1/2c. milk, I use skim. You will need an immersion mixer or blender to make this creamy..
  1. In a large soup pot add the olive oil, next, add in all the veggies. Cook over medium heat, stirring a bit for about 10 minutes, or until softened and just starting to brown. Add the butter and mix well. Add the flour and mix well. Cook three more minutes. Add the chicken broth and milk, lower the heat and simmer with a lid on for 20 minutes. Remove from heat a cool for 10 minutes. Next, using your immersion mixer or blender mix till creamy. Serve.
This recipe helps me curb my appetite when I'm trying to diet and I'm hungry. I can have two bowls of this and it fills me up and doesn't cost me a lot of calories.
