Delizioso Pasta with Pesto Sauce
INGREDIENTS

  • Preparation Time: 5 minutes
  • Leftover pasta (let's say 3/4 pound or make fresh with 1 lb)
  • 4 ounce (small) Jar of Pesto sauce (or fresh if you can get it!)
  • OR try making it - it's super easy!!!
  • Super easy Homemade Pesto Recipe:
  • large handful (or one bunch) of fresh basil stems removed
  • 1/2 cup of GOOD quality EVOO
  • 1/2 cup of GOOD grated cheese (Locatelli or Pecorino Romano)
  • 1/4 cup of Pignoli nuts (or walnuts if you don't have)
  • 1 tsp salt 1/2 tsp pepper
  • Best to make in a food processor - add all ingredients and puree until smooth, dollop all over fresh pasta and cooked chicken cutlet or meatballs, steak, it's AMAZING!!!
  • Grated cheese
DIRECTIONS
  1. Heat the pasta in a skillet with a tablespoon of Olive Oil, add Pesto Sauce and whatever meat you have in the fridge. Heat through, sprinkle with a good grated cheese (Pecorino Romano or Locatelli) and EAT!!
  2. Serve with Garlic Pesto Italian Bread (slice a loaf of bread Lengthwise, sauté garlic and oil in a pan (you can do this before you heat the pasta!) add a bit of the Pesto Sauce and brush over the bread. Bake at 350 for about 10 minutes till browned on the top) YUMMY
