Dijon-Lime Dressing

INGREDIENTS
  • 1/3 cup lime juice
  • 1/2 tsp Wild Lime Zest or finely minced leaf
  • 1 shallot, minced
  • 2 tsp Dijon mustard
  • Pinch of Coriander
  • 1/4 cup extra virgin olive oil or Macadamia nut oil
  • Salt to taste
  • Green Pepper to taste
DIRECTIONS
  1. In a small bowl, whisk together the juice, zest, shallots, coriander and dijon.
  2. Continue whisking ans slowly drizzle in the oil to create an emulsion
  3. Season with salt and Green pepper to taste.
