Easy Apple Torte

  • Crust: 6 tablespoons unsalted butter
  • one fourth cup sugar
  • 1 cup flour
  • 1 teaspoon vanilla
  • 8 ounces cream cheese
  • 1 egg
  • one fourth cup sugar
  • grated rind of one half a lemon
  • 4 firm baking apples, peeled, cored and sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons of sugar mixed with one half teaspoon of cinnamon
  1. Whip butter in food processor until light. Blend in sugar, flour and vanilla. Press into bottom and sides of a 9 inch springform pan. Blend cheese, egg, sugar and rind in processor and pour over crust. Preheat oven to 400 degrees. Toss apples with remaining ingredients and place in concentric circles on top of cheese mixture.
  2. Bake 35 minutes. (Place pan below, to catch drips). Serve at room temperature. Pretty garnished with sliced strawberries. Refrigerate the leftovers (if they're any).
