Easy Avocado Salad
INGREDIENTS
  • 3 ripe avocados
  • 1 cup grape tomatoes
  • 1 can black beans
  • 1 lime
  • 1/2 cup chopped fresh cilantro
  • 1 clove garlic, diced
  • olive oil
  • salt and pepper
DIRECTIONS
  1. Chop avocado into chunks and slice tomatoes in half. In a medium bowl, add avocado, tomato, beans, garlic, and cilantro.
  2. Season with salt and pepper, drizzle with olive oil and juice of 1/2 lime.
  3. Toss with a spoon until vegetables are coated and mixed well.
RECIPE BACKSTORY
Perfect as a side dish for a burger or anything off the grill. You can serve spoonfuls over greens, or even scoop it up with tortilla chips!
