Easy Chicken Cacciatore
  • 2 pounds chicken parts
  • 2 tablespoons shortening
  • 1 can condensed tomato soup
  • 1/4 cup water
  • 1/4 cup dry red wine, or 1 tablespoon vinegar
  • 2 large cloves garlic, minced
  • 1 teaspoon oregano, crushed
  • 1 medium green pepper, cut into strips
  • 1/2 cup chopped onions
  1. In large skillet, brown chicken in shortening; pour off fat. Add remaining ingredients.
  2. Cover and cook over low heat 45 minutes; stir now and then. Uncover; cook until sauce thickens.
This has been a family favorite for many years. Not quite authentic, but it sure is tasty. We love it served with rice or pasta.
