Easy Chicken Enchiladas

INGREDIENTS
  • 4 chicken breasts
  • 1 can black beans
  • 1 can diced tomatoes and green chiles
  • 1 c diced onion
  • 3 cans enchilada sauce
  • 12-pack of tortillas (burrito size)
  • cheese of choice (optional/to taste)
DIRECTIONS
  1. Boil and shred chicken. Mix chicken in with black beans, onions, tomatoes and chiles and 2 cans enchilada sauce. Fill tortillas, folding into an envelope. Place in greased 9x13 pan. Top with remaining enchilada sauce and as much cheese as desired. Bake at 350 for 30-40 minutes. Serves 4-6.
