Easy Citrus Cake

  • 1 1/2 cups all purpose flour
  • 2/3 cup sugar
  • 3 large eggs
  • 1/2 cup butter
  • 4 TBL milk
  • 2 TBL orange juice
  • 2 TBL grated orange zest
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
DIRECTIONS
  1. Lemon Frosting:
  2. 1 1/2 cups confectioners sugar
  3. 2 TBL melted butter
  4. 2-3 TBL lemon juice (enough to make it spreadable)
  5. 1. Preheat the over to 350 F and butter a 9 inch square pan
  6. 2. Beat the flour, sugar, eggs, butter, milk, orange juice, zest, baking powder, and salt in a large mixing bowl at a low speed until well blended. Then increase to medium speed and beat for 5 more minutes.
  7. 3. Spoon batter into pan and bake for about 40 minutes
  8. 4. Cool completely on wire rack
  9. 5. Spread the cake with frosting
