Doesn’t the thought of this ultimate Italian classic just make your mouth water? Golden brown chicken breast topped with marinara sauce and melted cheese, served with piping hot, buttery pasta? The only draw back, for most busy folks, is the time it takes to create! For those of us who crave Italian food from time to time, (and who doesn’t?) yet don’t have the luxury of spending hours in the kitchen, here is an easy, yet delicious, version that can be prepared and ready in a about an hour! Simply dredge the chicken breast in a combination of flour and bread crumbs seasoned with spices and herbs; brown in the oven; top with your favorite marinara, a dash of red wine and mozzarella cheese; bake for about 30 minutes and viola! You have an Italian masterpiece! I prefer to use home made marinara (recipe on my blog). I usually prepare lots and freeze it so that I can use in recipes such as this. But, if you have a favorite store brand, feel free to use it! Easy, peasy! Just serve with your favorite pasta and a tossed green salad! A perfect weeknight meal for busy families! This recipe serves 4 but can be doubled.
