Egg and Veggies Omelet

  • 2 eggs
  • 8 mushrooms, chopped
  • 8 spinach leaves
  • 1 clove garlic, diced
  • 1 tbsp onion, diced
  • 1 tbsp olive oil
  • Black pepper
  • Salt
DIRECTIONS
  1. Beat the two eggs in a bowl using an egg beater.
  2. Add spinach, mushrooms, salt, and pepper to taste.
  3. Mix well to incorporate all the ingredients.
  4. Heat up the olive oil in a pan to saute the garlic and onion.
  5. Add the eggs to the pan. Flip or fold the omelet. Cook until done.
