Eggnog Cheesecake

INGREDIENTS
  • 1-3/4 cups cinnamon graham cracker crumbs
  • 1/2 stick melted butter
  • 2 pkgs. (8 oz. each) cream cheese, softened
  • 2 cups eggnog
  • 1 cup milk
  • 2 pkg. (3.4 oz. ea.) instant pudding and pie filling mix
  • 2 tablespoons southern comfort or rum
  • 1/8 teaspoon nutmeg
DIRECTIONS
  1. Crush the graham cracker crumbs well, add the melted butter. Mix well and press firmly into the bottom of a 9-in. springform pan.
  2. Beat the cream cheese till fluffy, add the 1 cup of the eggnog, blend well. add remaining eggnog, milk, pudding mix, and southern comfort or rum and nutmeg. Beat 1 minute. Pour into prepared pan and chill for 3 hours {Overnight is best}
  3. To serve: Run a spatula around the sides of the pan to loosen before removing from the pan.
