Eggs and Maple Toast

  • 12 Bacon strips, diced
  • 1/2 Cup maple syrup
  • 1/4 Cup margarine
  • 12 Slices white bread
  • 12 Eggs
  • Salt and pepper to taste
  1. Preheat oven to 375 degrees F. Fry bacon until crisp. In a sauce pan, melt margarine and then add maple syrup and set aside. Remove crust from bread and flatten with rolling pin. Drizzle one side with maple mixture and press into a cupcake pan. Split bacon among bread cups and then crack an egg into each cup and salt and pepper to taste. Bake for 20 minutes until eggs are cooked through.
